No not that kind of special brownies, but they do have an extra special twist to them. It was my friend Colette’s birthday, and she works with my boyfriend, Jon (and she is actually how we met). Last year, I baked her brownies and had him bring them to work so she would have treats first thing in the morning on her birthday. And this year was going to be no different. I asked Jon to brainstorm with me on what to bake her that she would like. He obviously owes her many years of baked goods for the wonderful gift she gave him (me of course). We were discussing brownies and he said to add junior mints to them. He tells me to add junior mints to everything, so I blew that idea off. And then a few minutes later I realized that his junior mint fetish might be the ticket to a genius brownie combination. I brought out my inner Sandra Lee for this baking adventure and bought some Ghiradelli brownie mix and a king size box of junior mints. Semi-homemade at it’s finest.
Let me tell you, these brownies were delicious. So delicious that Colette’s boyfriend Jeff says they are the most amazing brownies that he has ever tasted. Which brings me to chapter 2 of the Junior Mint brownies. Jeff wanted to have more of these brownies, so he signed himself up to make “Jeff’s Special Brownies” for his work potluck. I was then called upon to teach him how to make these amazing brownies so he could impress all of his coworkers. I told him I would help if dinner was included. So, we had a potluck to make brownies for his potluck. And so it goes…
Junior Mint Brownies
1 box Ghiradelli double chocolate chip brownie mix
1 king size box junior mints
Jeff’s first baking adventure!
Make the brownies according to the box recipe.
Put them in the oven at the box temperature and take them out 5-10 minutes before it says you should. Throw some junior mints (literally throw those suckers!) into the brownies so they are somewhat submerged in the brownie mix.
Perfect placement is obviously key.
Put the brownies back in the oven for the duration of the time and take them out when the brownies are fully cooked. Once out, put the rest of the junior mints onto the top of the brownies.
When they are cooled, you can cut and eat!
But if you can’t wait like us, you will have some gooey goodness.
