Week two and I’m craving dessert. I haven’t exactly stuck to the no-processed foods cleanse, but I’ve done my darn bestest to not eat so many sweets. But guess what. I still crave them and my life is just not complete without some dessert in it. I do have to admit that not having sweets often makes me appreciate them THAT much more when I do treat myself. Too bad it involves so much willpower.
There’s gotta be a compromise, right? Right.
I found a recipe for these energy bites and they look like a perfect sweet treat for the afternoon since they have plenty of protein to keep you going and some chocolate chips to subside my cravings. And the main sweetener is honey! The healthiest form of sugar out there.
I think this is a great compromise.
Coco-Nutty Energy Bites
*Recipe Adapted from Smashed Peas and Carrots
- 1 cup oats
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup honey
- 1 cup coconut flakes
- 1/4 cup ground flaxseed
- 1/2 cup mini chocolate chips
- 1 tsp vanilla
Put all the ingredients into a medium bowl and mix together. Then roll them into 1 inch balls and you have yourself some energy bites! Makes about 18-24 balls depending how big you roll them.
If using peanut butter, stick the mixture in the fridge for about an hour so that they are less sticky when rolling. Store them in an air-tight container in the fridge for up to a week.
It’s like balls of cookie dough but kinda good for ya!

We call these bon bons at our house…my toddler goes crazy for them! Well, we all do. They go really fast 🙂

Did you mean oats? I made the recipe with oatmeal and it was way to wet and slimy to make into balls even after putting them into the fridge for 3 hours. The taste is terrific, though.

I ended up spreading the mixture out in a 8 x 8 pan and baking it at 350 for 20 minutes to dry them out a bit. I then rolled it into balls. They’re still pretty slimy, but they taste good! Also, because I used hot oatmeal, the chocolate chips melted, so mine are uniformly chocolately. Yum!
so you turned my mistake into a new creation?! love it! i think i’m going to go eat another one right now lol
