Three day weekends are the best. Whether you go out of town, or stay in, that 1 extra day off seems to make such a difference. Since Jon & I are headed to Europe in a couple weeks, we opted to stay in town this weekend. It turned out to be a weekend of good food. Starting with homemade dinner in Albany on Friday night & mint chocolate chip cookie sandwiches, Saturday brunch at Sunnyside, sushi & sake bombing dinner at Sudachi, Noah’s sunday-hangover-cure bagels, lunch at Toast after watching The Vow, Peruvian dinner at La Mar, and leftover everything today.
Let me tell you about the sweet snack I’ve been munching on all weekend long.
Double Chocolate Mint Cookies
*Recipe Adapted from Real Simple
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup Nestle dark chocolate and mint chips*
Cream the butter and sugars. Add the egg and vanilla and beat until mixed. In a separate bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt. Slowly add the flower mixture to the wet mixture. Once mixed, fold in the mint chocolate chips.
*I bought the mint chips during the holiday season and I believe they were limited time only. A good replacement would be chopped up Andes mints or just regular chocolate chips if you don’t want the mint flavoring.*
Scoop spoonfuls of cookie dough onto your cookie sheet. Bake for 12 minutes at 350 degrees.
Eat as cookies, or add mint chip or vanilla ice cream for a homemade cookie sandwich. Mmm good.

Wow! I don’t like mint much, but mmm those cookies! I’d love this with pretty much any other ice cream flavor 🙂
