I know, I know. I already did a chia seed pudding recipe. But, but, it is just that good! Especially for a non-dairy eater…like me. It’s sad but true. I gave up dairy for real this time (well, let’s say 90% of the time). The milk industry lied to me all those years. Milk products don’t do my body any good. I stopped eating and drinking most dairy about a month ago. The good news is that I have a lot more energy and have even lost a few pounds because of it. The bad news is that I still want pizza! Lasagna! Ice cream!
Luckily there are always good substitutes in times of need. Like coconut milk; my recent lifesaver. It has the creamy texture I miss from milk products and combined with chia seeds, it makes one delicious pudding-like substance.
My other new favorite food is mango. I used to hate mangos because of the weird texture, but I tried one again a few months ago and it seems those taste buds of mine have changed. Now I can’t get enough of them. Dried Mangoes are like candy and fresh mangoes aren’t too shabby either.
Especially when pureed and combined with the aforementioned tasty ingredients.
Mix it up and let it sit!
Simple as that.
- 1 Mango, peeled and pureed
- 1 cup coconut milk (250 ml)
- 3 tablespoons chia seeds
- Combine ingredients in a bowl. Let it set in the refrigerator for at least an hour.
- If it's not sweet enough for you, add a spoonful of agave nectar, maple syrup, or honey.

Love how simple this is! You’ve got me craving mango in the middle of the night. I was relieved to read that you are in Zurich. No one should be awake right now in California. Including me. Haha! Maybe I’ll have a version of this for breakfast! Looks great Caitlin!
haha yes, it’s a civil 10:20am where I am! Though this wouldn’t be the worst thing to eat if you need a middle of the night snack 🙂
I’m sorry to hear you can’t eat dairy anymore, but glad to hear you can feel it’s doing you good not eating it 🙂
