You know it’s a good day when you discover how to consume more chocolate without any of that pesky guilt. I was introduced to cacao nibs a few months ago at a get together and was immediately hooked on them. In case you don’t know, cacao nibs are small roasted bits taken from the cacao bean, before they are processed into cocoa to make chocolate. They have no added sugar and are chalk full of good-for-you stuff. After venturing into a mere five natural food stores, I found them! I bought them immediately and noted exactly where to go back for more. I’m never going to call Whole Foods bad names like Whole Paycheck again, because I miss that place like crazy. What I wouldn’t give for one in Switzerland…
Anyways, I’ll stop never ending complaining about Swiss grocery stores for a moment because I want to tell the world about my new favorite snack. Or breakfast. Or dessert. Whatever floats your boat. The cashew cacao nib rice cake. It’s like a healthy chocolate chip cookie (I said HEALTHY – don’t get your hopes up too high!) but with a rice cake slathered in cashew butter as the cookie, cacao nibs as the chocolate chips, and honey for some natural sweetness.
Next time three o’clock rolls around and you get that craving for some sweet goodness, this snack is your new best friend. It gives you a little protein from the cashew butter, antioxidants and mood boosting qualities in the cacao, and some allergy combatants from the local honey.
No recipe required. Just grab a brown rice cake, layer on 100% cashew butter, sprinkle on some cacao nibs, and drizzle with honey. Simple as that. Happy snacking!
